What’s this about Coconuts?
Nutrition can be a complex and confusing issue. Coconut oil can be used in cooking, as a supplement and in beauty therapy. Coconut saturated fats are medium chain triglycerides (fatty acids) and increasingly it is being found that MCT’s boost energy, brain activity and aid weight loss.
Coconut flour is widely used as a substitute for regular flour in baking. The flour contains 5 grams of fiber per 2 tablespoons. Coconut flour has health benefits for people with diabetes as it has been shown to lower the glycemic index (a measure of the rate that a food increases blood sugar) and of course, it’s gluten-free.
All coconut products are not equal however. Coconut derived products that have been minimally processed retain the essential nutritional value available from the fresh product, and are likely to provide the greatest health and wellness benefits. The most natural coconut oils for example, are virgin oils (original pressing) and mechanically extracted rather than using chemical extraction processes.
