This simple sugar has an identical chemical structure to glucose (blood sugar) and may be useful if someone has low blood sugar or is dehydrated.

Erythritol – Erythritol is a natural sugar alcohol that has the taste, appearance and texture of regular sugar, but is low calorie with negligible impact on blood sugar levels. Unlike sugar, erythritol does not cause tooth decay. It’s a great substitute for granulated sugar in any recipe.

Fructose - Sometimes called "fruit sugar" because it occurs naturally in many fruits, fructose looks like sugar but is about 1/3 sweeter. This means you can use less of it than you would with regular sugar. Fructose has a much lower impact on blood sugar levels than ordinary table sugar, making it a good choice for people with diabetes and those trying to lose weight.

Lecithin - Lecithin is a mixture of healthy fats that occurs naturally in foods such as soybeans and egg yolks. Since Lecithin is loaded with brain-boosting lipids like phosphatidyl choline and phosphatidyl serine, it is often used to treat memory disorders such as Alzheimer’s disease and dementia. Lecithin may also improve cholesterol levels. When used in cooking, lecithin is an effective emulsifier. It helps fats and oils disperse throughout a food mixture, giving it a smooth, uniform texture. For example, you can use it in cake batter and other baking mixes. Lecithin is tasteless, so it won't alter the food’s flavor. Lecithin granules are the most cost-effective form of this useful ingredient. They dissolve easily in the presence of other fats and oils.

Xylitol - Xylitol is another sugar alcohol like Erythriol. It has a similar taste and appearance to sugar, but far fewer calories and a much smaller impact on blood sugar. In fact, it has been shown to inhibit tooth decay and is used in many candies and chewing gums.
